Pennyweight Market's Fave Tea Biscuits

Easy peasy, soft and cheesy! An old fashioned biscuit recipe gets a Pennyweight makeover.

There is nothing quite like a warm biscuit fresh from the oven, smothered in butter or jam. This recipe is a tried and true family favourite, enlivened with seasoned sea salt from Saltwest Naturals. We used their handcrafted onion and chive infused sea salt in these biscuits, but any of their savoury or spicy flavours could be substituted. By adding this special ingredient, our basic biscuit recipe is easily updated. For our biscuits, we also prefer to use a Manitoba made Bothwell cheese, and our double action baking powder. Canadian sea salt by Saltwest adds a special touch

2 cups cake flour 3 tsp. double acting baking powder 1/2 tsp. baking soda 1 tsp. Saltwest Naturals Onion & Chive sea salt 1/2 cup cold butter (this is important! Make sure your butter is cold!) 1 cup sour cream or buttermilk 1.5 cups Bothwell Cheese of your choice Mix all ingredients, just until combined. Roll out 1/2 inch thick and cut rounds approx. 2 inches wide. Bake at 450 F for 12 minutes. Serve with butter or jam. Best eaten fresh from the oven.
