It is fitting the the word "Chia" is Mayan for "Strength", since the small black seed is considered a superfood. Hemp seed is another one of natures superfoods, high in fiber, containing a balance of Omega 3 & Omega 6 fats, and many trace minerals. Chia & Hemp Cookie Recipe 1 1/3 cup spelt or whole wheat flour 1 1/2 cup large flake oatmeal 3/4 cup unsweetened coconut 1/4 cup chia seed 1/4 cup hemp seed 1/2 cup mini-chocolate chips (or carob chips) 1/2 tsp. baking soda 1/2 tsp. baking powder 1/2 tsp. salt 1 cup butter 1/2 cup brown sugar 1 egg 1 tsp. vanilla extract Directions Combine all dry ingredients. In a seperate mixing bowl, beat butter well. Combine brown sugar and vanilla into beaten butter. Beat mixture on medium speed until combined. Add egg and beat into mixture. Slowly add dry ingredient mixture into butter mixture on low speed. This is a thick batter, and may benefit from hand mixing at the end to mix everything well. Scoop out onto cookie sheet with tablespoon. Flatten slightly with a fork. Bake at 350 for 10-12 minutes
