Sneaky Cookies
This unique cookie hides two very healthy ingredients, and tastes amazing. Not too sweet, tender with a hint of seedy crunch. They make great school snacks for parents desperate to sneak nutrition into miniature food critics. They are a hit with big kids too, and can be dressed up with dried cranberries, or a smidge of pumpkin pie spice and walnuts, to create seasonal cookie sensations. Just a little goes a long way when it come to Chia seed. They are high in fiber, protein, healthy Omega 3 fats, minerals and vitamins. It is fitting the the word "Chia" is Mayan for "Strength", since the small black seed is considered a superfood. Hemp seed is another one of natures superfoods, high in fiber, containing a balance of Omega 3 & Omega 6 fats, and many trace minerals. Together, Chia and Hemp seed provide a nutritional boost, easily disguised, and ready to amaze your most discerning cookie eater. Chia & Hemp Cookie Recipe 1 1/3 cup spelt or whole wheat flour 1 1/2 cup large flake oatmeal 3/4 cup unsweetened coconut 1/4 cup chia seed 1/4 cup hemp seed 1/2 cup mini-chocolate chips (or carob chips) 1/2 tsp. baking soda 1/2 tsp. baking powder 1/2 tsp. salt 1 cup butter 1/2 cup brown sugar 1 egg 1 tsp. vanilla extract Directions Combine all dry ingredients. In a seperate mixing bowl, beat butter well. Combine brown sugar and vanilla into beaten butter. Beat mixture on medium speed until combined. Add egg and beat into mixture. Slowly add dry ingredient mixture into butter mixture on low speed. This is a thick batter, and may benefit from hand mixing at the end to mix everything well. Scoop out onto cookie sheet with tablespoon. Flatten slightly with a fork. Bake at 350 for 10-12 minutes
